Ingredients:
- 1 1/2 c. long-grain white rice (or brown rice for a healthier twist)
- 1 Tbsp olive oil (or coconut oil for a tropical touch)
- 1/2 medium onion, finely chopped
- 1/2 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 cup corn kernels (fresh or frozen)
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder (optional, for a hint of heat)
- 1 1/2 c. vegetable broth (or chicken broth)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp freshly ground black pepper
- 1 Tbsp lime juice (freshly squeezed)
- 2 Tbsp chopped fresh cilantro (optional for garnish)
- Zest of 1 lime (optional for extra citrus punch)
Instructions:
- Rinse rice. Boil 3 cups water, add rice, salt, and olive oil. Simmer 15-20 minutes until tender. Fluff, set aside.
- Heat 1 Tbsp oil in a skillet over medium heat. Sauté onion and bell peppers 5-6 minutes until softened.
- Stir in garlic, cumin, paprika, and chili powder (optional). Cook 1-2 minutes.
- Add corn, pour in broth. Simmer 3-4 minutes.
- Add cooked rice, stir gently. Cook 2-3 minutes. Adjust seasoning to taste.
- Remove from heat, stir in lime juice, and zest. Garnish with cilantro (optional).
- Serve warm as a side dish or with protein.
