Bacon Wrapped Pepper Poppers

Ingredients:

  • 8 large Anaheim peppers
  • 8 slices of bacon (thin-cut works best for crispiness)
  • 8 oz cream cheese (softened)
  • 1 c. shredded sharp cheddar cheese
  • 1/2 c. cooked and crumbled bacon (optional, for extra bacon flavor)
  • 1 Tbsp fresh cilantro (optional, for garnish)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Toothpicks (to secure the bacon)

Instructions:

  1. Preheat oven to 375°F. Slice Anaheim peppers lengthwise, remove seeds and membranes.
  2. Mix cream cheese, cheddar, crumbled bacon (optional), garlic powder, onion powder, salt, and pepper until smooth.
  3. Fill pepper halves with mixture.
  4. Wrap each pepper with bacon and secure with toothpick.
  5. Arrange on lined baking sheet. Bake 20-25 minutes until bacon is crispy and cheese is bubbling.
  6. Remove toothpicks. Garnish with cilantro (optional). Serve warm with your favorite dipping sauce.
