Southwest Sizzle Cornbread

Ingredients:

  • 1 c. cornmeal
  • 1 c. all-purpose flour
  • 1 Tbsp sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 c. buttermilk
  • 1/4 c. melted butter
  • 2 large eggs
  • 1 c. shredded sharp cheddar cheese
  • 2 medium jalapeños, finely diced (seeds removed for less heat)
  • 1/4 c. chopped fresh cilantro (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F. Grease an 8x8-inch square baking dish.
  2. Whisk cornmeal, flour, sugar, baking powder, salt, and pepper in large bowl.
  3. Whisk buttermilk, melted butter, and eggs in separate bowl until smooth.
  4. Stir cheese and jalapeños into dry ingredients.
  5. Pour wet ingredients into dry, stir gently until combined.
  6. Pour batter into pan, spread evenly. Bake 20-25 minutes until golden brown.
  7. Cool slightly before slicing. Garnish with cilantro (optional). Serve warm.
